Is the PS3 capable of a 5.1 Surround Sound System? And do I need HDMI cable for TV?

Forgive my ignorance on technical specifications regarding electronics, but that is what Yahoo Answers are for! I am planning on buying my fiancee a PS3 for Christmas to enjoy both gaming and blu ray movies, but my question is this: In the future we are planning on buying a Bose 5.1 surround sound system to be hooked up to a flatscreen Sony TV as well as the PS3 to watch Blu-Ray movies. My question comes in two parts - first, is the PS3 even capable of being hooked up to a 5.1? And secondly, am I still going to need to purchase a HDMI cable for our future television?
